Where do you get dinner in downtown Easton on a Tuesday? Washington Street Pub is closed that day. Roma Alla Pala is closed. Bas Rouge and The Stewart are closed. The Wardroom, the Italian restaurant at 103 N. Washington Street, opens at 5 p.m.
On Monday the order flips. The Wardroom is closed, while the Pub and Roma Alla Pala are both serving. All five of those dinner rooms belong to one company, Bluepoint Hospitality Group. Read their posted hours side by side and a pattern shows up. The days each venue closes fit together, so on any night of the week at least one Bluepoint kitchen is open downtown. In Easton, knowing who closes when has become the most useful local knowledge there is.
One owner, a handful of downtown streets
Paul Prager founded Bluepoint in 2013. The Maryland Daily Record reported in September that he "fell in love with Easton" as a respite from his training at the U.S. Naval Academy and later began buying and reviving empty properties on Federal Street. The first concept was Sunflowers & Greens. That same report counts 16 Bluepoint concepts in a town of roughly 17,000 people. Bluepoint's own properties page lists 15: 11 dining concepts, three shops and one performing arts venue.
All of them have downtown addresses:
- Federal Street: The Stewart at No. 3, Weather Gage Coffee at No. 7, Sunflowers & Greens at No. 11, Bumble Bee To-Go at No. 13, Bas Rouge at No. 19
- Goldsborough Street: P. Bordier at 5A, Bonheur at 5B, Benjamin at No. 9
- Washington Street: Washington Street Pub at 20 N., The Wardroom at 103 N., The Flour Shop at 115 N., and the Prager Family Center for the Arts at 17 S.
- Dover Street and S.W. Street: Flying Cloud Booksellers at 26 W. Dover, Flying Cloud Fine Art Posters at 24 W. Dover, Roma Alla Pala at 2A S.W. Street
With that many doors under one owner, the schedule matters more than any one menu. Each venue keeps its own hours, and the closed days are spread across the week.

A few things follow from the table. Weather Gage Coffee is the only Bluepoint dining spot open all seven days. Flying Cloud Booksellers on West Dover keeps the same seven-day schedule on the retail side. Lunch at Bas Rouge happens just two days a week, Thursday and Friday from 11:30 a.m. to 1:30 p.m., which makes it the hardest seat in the group to time. Tuesday is the one night with no Bluepoint bar open after 9. The Pub, the late-night option for the rest of the week, takes its day off then.
Monday is quiet in a different way. Bonheur, The Flour Shop, The Wardroom, P. Bordier, Bumble Bee To-Go and Bas Rouge are all closed. Even so, Sunflowers & Greens serves lunch until 2:30, Roma Alla Pala stays open until 8 and the Pub until 11.
The newest door closes when the bread runs out
The Flour Shop, at 115 N. Washington Street, is the newest addition. Bluepoint opened it in mid-August, and the Daily Record describes it as run by a team of bakers and chocolatiers. The Star Democrat reported that it took over a space that used to be a flower shop, with Sarah Deale leading the baking program and John Aversa as head baker.
Unlike every other place in the table, its closing time isn't fixed. Bluepoint's page for the bakery lists Tuesday through Sunday from 8 a.m. "until sold out," closed Mondays. For bread on a weekend morning, the clock that counts is how fast it sells. P. Bordier on Goldsborough is the group's other bakery, a French pâtisserie and crêperie, and it doesn't open until 11 a.m. That leaves The Flour Shop as the early-morning bread stop.
Washington Street Pub sits on the same street at No. 20. The Daily Record notes it had been empty for years before Bluepoint restored it. It now has refinished wood floors, a second floor with leather banquettes overlooking a large oyster bar, and a gallery of duck decoys on the private dining level.
Why the calendar keeps getting longer
Bluepoint doesn't treat the roster as finished. The Daily Record reported in late September that a Bluepoint retail wine shop was "slated to open later in the fall." That report gave no name, address or date, so it may well open before the holidays. In the same piece, Acting Director of Operations Stephen Loffredo said, "We have plans to do quite a few other things." He also pushed back on the idea of a master plan. "It started with one small venture, and then there was a second venue, and then there was a third venue," he said.
The kitchens are run differently now too. Harley Peet, the Bas Rouge chef who won the 2024 James Beard Award for Best Chef: Mid-Atlantic, became executive chef of the whole group this year. He told the Daily Record that the role lets him "oversee the entire operation" and develop new spaces.
The next projects reach past the downtown storefronts. In May, the company's Bluepoint Living arm agreed to buy the 14.84-acre former University of Maryland Shore Regional Health site on Washington Street. The deal is set to close in 2028, after the hospital moves to its new regional medical center. Prager has said he plans a residential community there with "generous green spaces." Separately, Bluepoint bought waterfront parcels on Port Street at Easton Point between 2018 and 2021. Prager wants to develop them into mixed-use space "designed to create a destination on the waterfront with easy access to downtown Easton." No timeline has been announced.
Easton Mayor Megan Cook told the Daily Record she was enthusiastic about the "once-in-a-generation" development, adding that "there isn't another property that is as close, or as large, to downtown."
How town officials describe it
According to the same Daily Record report, Mayor Cook said residents have "largely been positive." Ward 1 Councilmember Maureen Curry welcomed the hospital purchase. "We could have wound up with anybody," she said. Curry also said reactions have not been happy "across the board." A minority of residents, she said, worry that "one person having so much invested in a town (Easton's) size could be a detriment."
Cost is the other recurring question. Council President Don Abbatiello told the paper that some residents consider the concepts unaffordable. He spoke as a schoolteacher himself: "There's some restaurants I'm not going to go to, but there's still lots of options." The spread is wide. As of September 2026, a tasting menu at Bas Rouge could cost $195, while meals at Sunflowers & Greens started at $14. Holly DeKarske, executive director of the Easton Economic Development Corporation, told the paper that Bluepoint's venues "have shown an uptick in tourists and travelers" from New York City and Washington.
Visitors from the city plan around weekends. For people who live here, the table above is the more useful guide, because the gaps fall on Mondays and Tuesdays.
Filling the gaps this November
Easton's calendar has plenty of independent operators too, and two of them open new seasonal runs in early November. Talbot Humane's Pawsitively Fabulous Pet Boutique returns to 7894 Ocean Gateway from November 5 through December 19, with proceeds supporting the organization's programs, according to the Talbot Spy. On Dover Street, the same street as the Flying Cloud shops, Spiralis Gallery at 35 Dover Street opens Crossfade on November 6. The show features oil paintings by Leslie Lumeh and Levi Robinson, has an opening reception that evening, and runs through January 3, the Spy reported.
The opening reception falls on a Friday, and Friday is the night the posted hours run latest. The Stewart is open until 11 and Washington Street Pub until midnight.
